Supplements

I have always been the type of person who has cupboards full of random supplements and superfoods but who also only sporadically takes them.  When I remember, when I feel like it, when something reminds me to do it or when I start to feel bad about having so many things around collecting dust, hehe.

Well, being pregnant has shifted that a little bit.  I can’t say that I have been perfect but I have certainly improved a hell of a lot.  And this is what I am taking:

Vitamin Code Raw Prenatal: In my first trimester, I was barely able to get these down so I stopped for a while.  Honestly, they stink.  Bad. I think it is because they have natto extract in there, which is an awesome source of necessary vitamin K2 but unfortunately not so delicious.  Whatever, now I just chug them down with some fresh squeezed grapefruit juice like it’s nothing

DHA: At the moment, I am taking one that Shazzie recommends in her book Evie‘s Kitchen, which is called O-Mega-Zen3.  Instead of nasty fish oils, this one is made from algae.

B-12: I decided on a liquid b-12 called Ultra B-12 made by NOW Foods.  It has three different forms of B-12 plus other B vitamins to make it more absorbable.  And it came in a huge bottle that I could easily transport back from America and that will probably last me well into breastfeeding.

Greener Grasses: This powder made by HealthForce Nutritionals is made of  wheatgrass, barleybrass, alfalfa, dandelion and oat grass.  I mix it in with fresh orange or grapefruit juice and sometimes I made a green lemonade drink with lemons, stevia, the powder and water.

Chlorella: I take this sometimes in tablet form and sometimes in powder form.  I still can’t get down with chewing the tablets whole like some hardcore raw foodies do, though!!

That is more or less my daily routine.  I am also adding in Ionic Iron, liquid Iodine and Crystal Manna (an algae) which I have but haven’t begun using yet for some reason as well as some sort of Calcium supplement, which I will use in conjunction with the Magnesium oil I already have.

That’s it!  What do you think-have I got all my bases covered or is there a glaringly obvious deficit somewhere in there?

back again! and almond pulp cookie recipe!

Things with my pregnancy are going pretty well now.  I had a little setback after my last post where I started feeling terrible and had lots of nausea again :(   But now I am going into week 16, which means I am in my second trimester!  I can really hardly believe it, it sounds so surreal.

Anyway, when I wasn’t feeling great, I was eating lots of less than optimal foods like boiled potatoes, gluten free pastas and spelt bread.  I am sure that didn’t help with my lack of energy or motivation to be in the kitchen preparing myself good foods that I love!

I have gotten my kitchen mojo back now, though!!

Yesterday morning I wasn’t really feeling that hungry so I had an apple and then made about half a litre of carob and lucuma almond milk.  That was delicious and then later I had the juice of two grapefruits mixed with Greener Grasses powder.

For lunch, I had raw banana ice cream with some added carob, honey and hemp oil.  I have been LOVING me some banana ice cream recently! The hardest part about it is remembering to cut up and freeze ripe bananas.

I really wanted to use up the almond milk pulp from that morning so I looked online and decided on a cookie recipe, which I will share at the end of the post ;)

For dinner, I put together some raw pizzas with a sprouted buckwheat, flax and sweet potato crust topped with sun-dried tomato marinara, pine nut cheese and veggies like cherry tomatoes, sliced onions, diced pineapple and freah basil leaves.  Oh, that was delicious.  It was the first time I have made raw pizza in months.

This morning, I started my day with some leftover raw pizza, hehe, breakfast of champions! I also had some almond milk with rooibosh tea.  Oh, and one of the cookies I made yesterday.

Right now, I am contemplating lunch.  I have a purple corn chia pudding in the fridge.  I think I will have that with a zucchini, tomato and avocado soup.

I am so happy that my body is finally craving raw foods again, and that I have the energy to make them.

ok. so here is the almond pulp cookie recipe:

RawGuru´s Fave Cookie Dough Recipe

1 1/2 cups nut milk pulp (or you can just use nut flour if you don’t have it)

5 tbsp. coconut butter

7-10 dates

1/2 tsp. vanilla extract (I make my own, but you could also use half of a vanilla bean- yum!)

pinch of himalayan or celtic salt

1-2 pinches of cinnamon

pinch of nutmeg

water to moist

Process all ingredients in a food processor until mixture is well incorporated and doughy looking.  Shape into balls, flatten and dehydrate at 105 degrees for 10 hours.

a new life for my blog!

I mean that in the most literal of possible ways :)   See, I am pregnant!  As of now, I am 10 weeks along and super happy although sort of overwhelmed by all the new information I have learned already and feel like I need to learn before giving birth.  I *know* I am just supposed to breathe and trust in the flow but sometimes that is easier said than done…even for someone in the middle of yoga teacher training, haha!

For the first 5 or 6 weeks of being pregnant I had no idea, but I felt wonderful.  Then, I went to the US to visit my family for Christmas and started feeling awful.  That plus the food available in the city where my parents live meant that I was not in a good place at all.  I ended up gaining about 20 pounds in three weeks.  Awful, just awful!

Then, we got back to Spain and I started feeling even worse.  Instead of eating to help with the nausea, I couldn’t eat at all.  I had been living on rice cakes and peanut butter, sprouted and dried almonds and fresh apples until finally one day last week I felt good enough to get the blender out and I made my first green smoothie since being pregnant.  Oh my gosh, it tasted wonderful! I made the decision there that I want this pregnancy to be high-raw.  I know it may not always be possible, but I am going to do the best that I can while still being flexible enough to respect where I am at the moment.  Sound good?

Here is what I have been eating the past few days:

20 Jan 2012

-breakfast porridge with cooked oats, banana, peanut butter, honey and cinnamon
-one big ass juicy orange
-midmorning snack of 1.5 Raw Health brand raw pitta bread (basically just a not so yummy thick raw cracker) topped with a guacamole made from avocado, lemon juice, garlic, salt and chopped cherry tomatoes
-lunch of big salad made by hubby with lettuce, beets, cucumbers, apples and celery mixed with a mustard dill dressing
-bit of a Raw Health brand cherry chocolate bar (also underwhelming, but sort of awesome that I prefer my own creations!)
-a few unsulphured dried apricots
-some raw brownie crumbles and chopped strawberries
-two tiny carrots and a little hazelnut basil pate
-stevia lemonade
-cooked dinner of sauteed onions, brussel sprouts with rice pasta and walnut pate thinned out with packaged almond milk

Supplements: today I had 3 Vitamin Code Prenatal vitamins, one DHA cap and a spray of sublingual vitamin D

21 Jan 2012

-porridge with strawberries and carob powder
-2 organic eggs (which I immediately threw up)
-raw brownie and a few sips of green tea
-fresh pineapple
-salad and a bit of white bean soup from Ecocentre buffet
-small tub of chocolate Booja Booja raw ice cream
-dried apple pieces
-dinner of organic corn/mushroom pasta with broccoli, green peppers, sundried tomatoes, carrots and basil tofu

Supplements: 2 Vitamin Code raw prenatal vitamins

I am looking forward to sharing how my pregnancy unfolds and how my diet evolves to meet my changing needs and body :)

xx

Strawberry Banana White Chocolate Cheesecake on a Brazil Nut biscuit crust. OMG!

something sweet in a bowl

I’ve been acting kind of crazy all day.  I got the wild hair that I really wanted to do some cardio exercize today and I wanted to find a video to workout with.  Well, I didn’t have much luck at all.  I ended up doing about 5 minutes of various silly line dances, and then moving on to something else.  Then I just sort of gave up and decided to go for a longish walk with my dogs.

If anybody has recommendations for fun, free online workout videos, preferably something dancy, then let me know!

After my walk, I was really hungry but we don’t have too much in the house.  I decided that I was going to make something sweet in a bowl, and here is what I had:

2 small pots soy yogurt  (I would have LOVED to use coconut or almond yogurt, but I can’t get it)

1 tbsp. rolled oats

1 tbsp. trail mix (mine has mulberries, buckwheaties, sunflower seeds and pumpkin seeds)

2 tbsp. raw carob

1 tbsp. tahini

1 tbsp. honey or agave

Mix together in a bowl and nom the yums!

Super simple and super quick!

Raw Spicy Cheez-Its

Raw Spicy Cheez-Its by DivineMissEm

These are so super delicious that it is hard to believe they are raw. The recipe is adapted from Kate Wood’s (now Kate Magic) Traffic Light Biscuits in Raw Living. I use her base of brazil nuts, flax and red peppers and add a bit of red onion, tiny bit of tomato, nutritional yeast and green Tabasco.

Light Pesto Carrot Boats

This is a lovely light, yet filling dish inspired by the fresh basil I’ve got growing at the moment.  I live in an apartment, so I’ve got lots of plants growing indoors as well as on the balcony.  Don’t let not having access to land stop you from including fresh homegrown veggies and herbs in your diet!  Some of the edible plants that we have had success growing indoors are tomatoes, chili peppers, sunflower sprouts, aloe vera, purslane, basil and more!

Even if you’ve got  what you think is a black thumb, you can ALWAYS and  I mean always sprout a few things in jars.  Sprouts are a delicious addition to salads and soups, or you can just sprinkle them on anything to up the nutrition as well as the crunch factor to your meal.

Light Pesto Carrot Boats

Filling:

3 carrots

1 tomato

1 avocado

1/2 cup pesto (it seems everybody and their mama has a pesto recipe.  If you want a raw/vegan pesto recipe, lemme know!)

To serve:

1 head baby gem lettuce

2 tbsp. chopped red onions

2 tbsp. shelled hemp seeds

First, grate the carrot with a large box grater or in a food processor.  Then chop the tomato and avocado, and mix with the grated carrot in a large mixing bowl.  Add pesto and toss until everything is evenly mixed and the avocados are mashed and smooshed a bit.

Spoon the filling mixture into the lettuce leaves, then top each leaf with a sprinkle of chopped purple onion and hemp seeds.

Simple and delish!

Purple Summer Cooler

Here we are in late August, and although Autumn is slowly creeping closer, you wouldn’t be able to tell by the temperatures we are still having here in Madrid.  And luckily for me, the stores are still full of summertime fruit!  I am certainly taking advantage of the watermelons, Galia melons, peaches, nectarine, paraguayos and berries that are in season right now.

I think I have probably eaten my weight in watermelon this summer, and most of it has been in its natural state.  I tend to take half a watermelon, get a spoon, sit down at the table and chow down!  But I decided to branch out a little bit and make a drink, and this one came out deeelish! It is such a lovely deep purple color and so very hydrating.

This drink is a delightfully refreshing way to cool down on a hot late summers day and still get your greens in!

So, without further ado-

Purple Summer Cooler:

Makes 2 servings

Blend and strain the following:

3.5 cups watermelon

1 small head romaine lettuce

1 cup frozen mixed berries (I used blackberries, raspberries, cherries and mulberries)

Then, blend the mixture with 1 frozen banana.  Pour into tall glasses and enjoy!  Easy-Peasy :)

InSpiral Lounge review

I just got back a few days ago from 9 days in England, on the Isle of Wight where my in-laws live.  Before making the epically long and expensive journey to the IOW, I wanted to make a quick stop into London-to Camden where my favorite store, Braintree Hemp is located as well as InSpiral lounge which I had wanted to visit for a long time now.

After stocking up on some lovely hemp clothing, including two dresses, a skirt, a fabulous pair of black trousers and a purple backpack, we hit up InSpiral.

I was first a little shocked at the inside as it wasn’t what I was expecting.  I suppose I expected something a little more formal with table service, but everything is pre-made behind a case.  You line up to order and pay and then find a table.  It was really crowded when we first went in, but we lucked out and got a table almost immediately although it took a little more maneuvering to figure out where the line was to order.  I found the staff to be knowledgeable but slightly unfriendly, except for one woman who was super friendly and chatty.  I have the feeling she may have been a manager!

However, the most important part is the food!  We truly weren’t that hungry but I was determined to try out some dishes!!  I ordered the raw nachos, and with every meal you get three sides so I chose three raw salads.  One was the Raw Caesar, then there was a massaged kale dish and another beetroot and apple superfood salad.

I was super impressed with this dish!  The crackers or nacho chips were really crisp which is important in raw food dishes.  The part that blew me away was the nut meat.  I have experimented in the past with raw taco meat, and this version was INCREDIBLE and super spicy!  I could tell that it was made with sunflower seeds which is surprising because I haven’t had too much luck with sunflower meats in the past.

My hubby went for the Love Burger with the same sides as me.

I thought his burger was good, but truly nothing can compare to the raw burgers we got in Amsterdam at a market stall!

The salads were really good.  The kale salad was my favorite- it was simple, fresh and delicious but the other two salads really shined in the creative front.  I appreciated InSpiral’s liberal use of superfoods in the dishes as I think that those ingredients can really take a dish to the next level, and they were very inventive in this way.  The Caesar salad for example had cacao nibs, and the beetroot and apple salad had maca, as well as many other things that I can’t remember now!

I also wanted to pick up a few things to take away with me for the rest of our trip.  They sell raw chocolates, and had on offer a box of seven rejects for quite cheap.  Having made raw chocolate, I know that not every one can turn out beautifully and I was happy to take them off their hands :)

I also picked up two containers of Cheesy purple corn kale chips which were so so very delicious that I should have picked up 10 more, a bag of Loveberry granola which was meh but made me feel waay better about my own underwhelming experiences making raw granola, and a piece of raw key lime pie, which I had for breakfast the next day and was just amazing and tart and sweet and creamy and everything that key lime should be.

So there! All in all, I was very impressed with InSpiral Lounge and wish that were closer or that I lived nearer.  The food was tasty, cheap, filling and interesting, all vegan, and what we ordered was all raw.  You really can’t do much better than that!

Buddha loves cake

I am so proud of this cake! I have finally cracked the code on making raw cakes without loads of heavy nuts. It is raw, vegan, totally gluten-free and nut-free.

It’s a seriously dark chocolate base, super dense and creamy with a crunchy white chocolate and purple corn icing.
