Raw wedding

This Saturday, I had the pleasure of attending the wedding of two friends.  They basically ARE the raw scene here in Madrid and so fittingly they decided to have an all raw wedding.

The ceremony itself was beautiful simple, very personal and a little bit paganistic (although I don’t know if they would describe it that way!)

After the ceremony, we had a snack of the most delicious raw pizza, crackers with guacamole and sprouts, brownies, lemon bars and the sweetest mangos, figs and watermelon in the world.  I was too busy eating to even think about taking pictures.

A few hours later, we had dinner which was lovingly prepared by the Espiritual Chef Javier Medvedowsky.  He’s getting quite famous here in Spain as he has a monthly feature in the magazine Cocina Vegetariana.

He made an avocado soup, a zucchini quiche in an almond crust, salad with pepper-tahini dressing, and tricolor pasta with pesto and sun-dried tomato sauces.  For dessert, we had an apple cookie with cashew cream, a rich chocolate mousse and little fruit leather towers with mango sauce.  Lovely!

The pièce de résistance would have to be the three-tier wedding cake.  It was a carrot cake, all raw and all vegan of course.

All in all, it was a beautiful day and I am so blessed to have shared their special day.
